Pumpkin Crisp

Ingredients
- Pumpkin
- 1- 15oz can of pumpkin
- 1 cup granulated sugar
- 3 large eggs
- 2 tsp pumpkin pie spice
- 1/2 tsp salt
- 2 tsp vanilla
- 2/3 cup heavy cream
- Streusel
- 2 cups flour
- 1 1/2 cup granulated sugar
- 2 tsp cinnamon
- 1/2 tsp salt
- 12 Tbsp unsalted butter
Directions
- Heat the oven to 375F. Butter a medium casserole dish and set aside
- Pumpkin
- In large bowl, whisk pumpkin, sugar, eggs, pumpkin pie spice, salt, vanilla
- Whisk in heavy cream until smooth and pour into casserole dish
- Streusel
- In medium bowl, whisk flour, sugar, cinnamon, and salt. Add melted butter and stir with fork until crumbly
- Spread streusel topping on top of pumpkin layer
- Bake until filling is set and top if golden brown (40-45 min)
