Garlic Spinach Orzo
Ingredients
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1/2 medium onion chopped
- 4 cloves garlic minced
- 1/4 teaspoon Italian seasoning
- 1 cup uncooked orzo pasta
- 2 cups chicken or vegetable broth
- 1 cup heavy/whipping cream
- 1/2 cup freshly grated parmesan cheese
- 2 cups (packed) baby spinach
- Salt & pepper to taste
Directions
- Add the oil, butter, and onion to a pot over medium-high heat.
- Sauté the onion for 3-4 minutes
- Add the garlic, Italian seasoning, and orzo.
- Cook for 2-3 minutes, stirring often
- Stir in broth and cream
- Once bubbling, reduce heat and continue cooking for 10 min uncovered stirring often
- Turn off heat
- stir in parmesan and spinach
- cover for 3-5 min until thickened
- Season with salt and pepper
