White Chicken Chili
Ingredients
- 30 oz Great Northern Beans drained & rinsed
- 2 cups frozen corn
- 1/2 cup yellow onion diced
- 2 garlic cloves minced
- 4 oz hatch green chilies
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 1 lb boneless skinless chicken breast or thighs
- 1/2 cup plain cream cheese
- 1 1/4 cup chicken broth
- 2 tbsp lime juice
- Cilantro
- jalapeno
- Avocado
- tortilla chips
Directions
- Add beans, corn, onion, garlic, green chilies and spices to instapot
- Lay chicken on top
- Add cream cheese in 6 chunks
- Pour chicken broth on top
- Pressure cook for 15 minutes
- natural release for 10 minutes
- Manually release pressure
- take chicken out and shred with two forks
- Add chicken back and stir
- Add toppings optionally
