Vegetable Soup
Ingredients
- 1 medium sized yellow onion chopped
- 4 carrots pealed and chopped
- 2 large celery sticks chopped
- 4 cloves of garlic
- 2 cans vegetable broth
- 2 cans coconut milk
- salt
- pepper
- 3 cups of flour
- 1 cup of warm water
- 2 tbsp olive oil
Directions
- Mix flour and water and oil together in a mixing bowl to make noodles
- knead the dough and let sit at least 30 minutes under a towel while cooking soup
- Grease a pot with olive oil and simmer onions on medium heat to soften
- add minced garlic, carrots, and celery to pot
- let cook for a bit to soften vegetables. 2min (they wont be fully softened yet)
- add coconut milk and vegetable broth to pot
- wait until boil and then reduce to simmer
- salt and pepper to taste
- Simmer until carrots and celery are softened through
- Cut noodle dough and add to pot to cook
- serve when noodles are cooked
Notes
Cutting the noodles into little cubes is kind of fun for little dumplings in the soup
