Vegetable Soup

Directions

  1. Mix flour and water and oil together in a mixing bowl to make noodles
  2. knead the dough and let sit at least 30 minutes under a towel while cooking soup
  3. Grease a pot with olive oil and simmer onions on medium heat to soften
  4. add minced garlic, carrots, and celery to pot
  5. let cook for a bit to soften vegetables. 2min (they wont be fully softened yet)
  6. add coconut milk and vegetable broth to pot
  7. wait until boil and then reduce to simmer
  8. salt and pepper to taste
  9. Simmer until carrots and celery are softened through
  10. Cut noodle dough and add to pot to cook
  11. serve when noodles are cooked

Notes

Cutting the noodles into little cubes is kind of fun for little dumplings in the soup
