Flourless Chocolate Cookies
Ingredients
- 1 2/3 cup confectioner's sugar
- 1/2 scant cup unsweetened dark cocoa powder
- 1/2 tsp coarse sea salt
- Whites from 2 large eggs
- 1 1/4 tsp vanilla extract
- 1/2 cup milk chocolate chips
- 1/2 cup dark chocolate chips
Directions
- Heat oven to 375 F
- Line baking sheet with parchment paper
- Whisk powdered sugar, cocoa powder, and salt with a fork in a medium size bowl
- Whisk egg whites and vanilla together in a small bowl
- Make a well in center of dry ingredients and pour in egg mixture
- Stir with fork until it just starts to come together
- Add chocolate chips
- Stir until dough is extremely sticky and dark like black licorice
- Use #60 scoop to scoop batter. Make sure tight and packed lest the cookies spread and separate as they bake.
- Place cookies on parchment paper 3 inches apart
- Bake for 12 min or until tops are glossy and set
- Cool cookies on paper on a wire rack for 10 min
- Repeat for the rest of the dough
Notes
#60 scoop is like small a ice cream scoop or 1 tbsp measuring spoon. Cookies are best on the day they were made.
