Flourless Chocolate Cookies



  1. Heat oven to 375 F
  2. Line baking sheet with parchment paper
  3. Whisk powdered sugar, cocoa powder, and salt with a fork in a medium size bowl
  4. Whisk egg whites and vanilla together in a small bowl
  5. Make a well in center of dry ingredients and pour in egg mixture
  6. Stir with fork until it just starts to come together
  7. Add chocolate chips
  8. Stir until dough is extremely sticky and dark like black licorice
  9. Use #60 scoop to scoop batter. Make sure tight and packed lest the cookies spread and separate as they bake.
  10. Place cookies on parchment paper 3 inches apart
  11. Bake for 12 min or until tops are glossy and set
  12. Cool cookies on paper on a wire rack for 10 min
  13. Repeat for the rest of the dough


#60 scoop is like small a ice cream scoop or 1 tbsp measuring spoon. Cookies are best on the day they were made.
