Cowboy Caviar
Ingredients
- 1 can shoepeg corn (11oz) drained
- 1 can black beans (15oz) rinsed/drained
- 1 can white beans (15oz) rinsed/drained
- 1 avocado chopped
- 1 red pepper chopped
- 2/3 cup cilantro chopped
- 2/3 cup green onion chopped
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 2 garlic cloves minced
- 3/4 tsp salt
- 1/8 tsp pepper
- 1 rounded tsp cumin
- 1 bag tortilla chips
Directions
- Combine beans, corn, avocado, red pepper, onion, and cilantro in a large bowl.
- In a tightly covered container, combine the other ingredients. Shake briskly.
- Pour the dressing over the bean/veggie mixture and stir.
- Ride on, cowboy.
